Who doesn't love tacos? During 2023 I ate tacos at least once a week, so I had tacos on the brain constantly. So naturally I wanted to make as authentic of a sauce as possible for tacos. Vermont might not be the place for true Mexican food, so I hit the internet searching for authentic taco recipes until I found one that really caught my eye and fit into the VPP flavor universe. Hailing from the Yucatan, Cochinita Pibil is what I discovered and I had to give it a shot. After some experiments, El Fuego Rojo was born.

This vibrant, citrus heavy sauce is a tribute to authentic Mexican cuisine. It has deep, developed flavor notes of charred onions, tomato, and serrano peppers to give it that salsa feel. The smokey notes of chipotle peppers, and the warm tones of our original taco seasoning blend of spices make this sauce complex in the best ways. El Fuego Rojo will be one of the best things you've ever had on tacos, but can be tossed on nearly anything. It will elevate chicken, pork, rice, pizza, and even steaks.
