Put simply, this is my take on a pesto inspired hot sauce. It may sound silly, but I had a spicy pesto chicken sandwich two years ago and I've been thinking about this sauce ever since. Fast forward to now, here we go. Dreams do come true. Our new sauce of summer has been born.
Pesto starts and ends with fresh basil, and this is the freshest basil you're going to get without growing it yourself like us! To make it into a hot sauce, we picked white wine vinegar with a squeeze of lemon juice to brighten this up and give it the acidity you'd expect from a hot sauce. Green chili peppers, primarily jalapenos and various Italian chilis serve as the heat source. Most pesto has parmesan and pine nuts traditionally right? Well, we scrapped that and added porcini mushroom powder and capers to give some of that nutty umami goodness. A splash of balsamic vinegar adds a very subtle sweetness to round out this seasonal sauce, along with a healthy amount of olive oil to keep this authentic to pesto.
